In 1989, Shanghai JIALE Flavoring Food Co., Ltd., the predecessor of Shanghai TOTOLE Flavoring Food Co., Ltd, was founded as a joint venture, specializing in the production of TOTOLE chicken bouillon and banquet soy sauce. In 1998, Shanghai JIALE Flavoring Food Co., Ltd. was renamed as Shanghai TOTOLE Flavoring Food Co., Ltd. From then on, the brand TOTOLE began to find its way deep into people’s mind as the company entered a new stage of rapid development. In 2003, TOTOLE occupied 42% of the Chinese chicken bouillon market share, and achieved a gross industrial output value of ¥776.427 million after several successive years of rapid growth.

Shanghai TOTOLE Flavoring Food Co., Ltd. took the initiative to research and develop a new generation of flavorings in the year as early as of 1984. After 20 years of struggle from R&D to application of the R&D results in the market, until the foundation of a large-scale, modern international corporation group integrating R&D, production and distribution, TOTOLE has gradually developed itself. As the explorer and pilot enterprise in Chinese chicken bouillon industry, TOTOLE managed to independently design and set up a production line for 50 thousand tons of chicken bouillon after a long term cooperation with several renowned international companies. Currently, TOTOLE offers a variety of flavorings classified in 6 categories and tens of subcategories, with its main product, TOTOLE chicken bouillon chosen by CCTV as the sole sponsoring dressing for 2 food programs “I Can Cook So Do You” & “Chinese Feast”. TOTOLE has been one of the renowned flavoring food enterprises in China.

A high-quality and tasty product comes from the advanced international quality control

TOTOLE chicken bouillon production line is currently the largest monomer production line in the world, with world-class functionality, continuation, systematicality, tightness, automatization, and so on.

As a flavoring, chicken bouillon is closely related to people’s daily life; therefore, the product which is built on advanced technology and equipment is more than essential. To look at the current Chinese flavoring industry comprehensively, there are still some conditions which hinder you feeing optimistic in spite of the general trend of rapid development, and, in the production of flavorings, unfavorable conditions such as the low technology and non-normative competition of the domestic market, and the weak consciousness of the international competition in flavoring industry. It is a firm belief for TOTOLE that enterprises should always be in good faith, and carry out production in accordance with certain standards so as to provide consumers with valuable products. After a synthesis of various advanced international quality control experiences, and based on company’s business demand and working conditions, TOTOLE built a set of integrated product quality control system in the entire logistic chain: including GMP implementation in all the business operations, HACCP analyzing to all the products, supervision on germs, QMS to all the links that are related to quality.

In terms of technology for quality guarantee in the production, TOTOLE chicken bouillon has consistently practiced “two quarantines, three sterilizations under high temperature” and UV sterilization. The three sterilizations under high temperature are: high temperature boiling, to boil the fresh chicken continuously for over 30 minutes under a high temperature above 100; refined process, to process the fresh chicken for 45 minutes under 70 before chicken bouillon is made; and high temperature drying process, to sterilize and dry the chicken bouillon under a high temperature above 105. Each day at the end of production, a UV sterilization will be practiced to the environment. What’s more, we use tightly closed transmission equipment to deliver the semi-manufactured chicken bouillon to packing room where products are packed by automatic packing facility. All this technologies and measures effectively prevent any cross contamination among products.

The quality control in TOTOLE is of first class. For each batch of raw material and packed stock, the supplier has to provide the material certificate and sample inspection will have to be carried out so as to prohibit from the very beginning any potential danger to TOTOLE products. The TOTOLE also has its own ecological farm, which vividly manifests its philosophy of natural environmental protection and its healthy flavoring concept. In this green farm, TOTOLE uses only those selected non-harmful hormone-free feeds. Some reusable side farm and sideline products, like shells and shallot roots, are recycled back to the ecological farm, which shows the philosophy of non-discharge and non-pollution environmental protection. The company is accordingly granted the title of “green industrial enterprise”.

For the time being, the international standard for water content in chicken bouillon is3%, and the actual water content in TOTOLE chicken bouillon is1%. So is the bacteria inspection: the international standard for bacteria is10000/g, while for TOTOLE, 1000/g, 10 times less than the international standard. The computer control system and field monitoring system give technological parameters like temperature and pressure a 24-hour monitor, record and automatic regulation. This computational control of the temperature is unique in Chinese chicken bouillon production. All these ensure the qualified formula and its respective quality indexes in terms of the color, aroma and flavor of TOTOLE chicken bouillon. TOTOLE chicken bouillon’s various technological indexes like raw material recombination rate, shelf life, freshness, taste level and water content are already on the top domestically and has in general reach and even exceed the international level.

TOTOLE features not only an integrated quality control system, but also a well-trained after-sale service team, who can provide quality service for the massive consumers. The company has set a 24-hour 800 free service hot line the purpose of answering questions and dealing with complaints from consumers. They give their priority to the consumers’ need under any circumstances. As a result, the complaint rate of TOTOLE products is only 6ppm, far lower than the average one of 200ppm in China, also much lower than the international standard of 20ppm. If one says that TOTOLE product quality control is one of the most outstanding systems, this is a forceful evidence.

A high-quality and tasty product comes from internationally advanced technical process

It has been proved that the taste of MSG has a limit while the exploration and development of it as a science has but no end. With the persistent exploration and pursuit of this science, TOTOLE began to establish its name. The development of the new generation of flavoring products originated from TOTOLE’s research and application of flavor development nucleotide. Common MSG is made up of single sodium glutamate and salt, whose taste is no more than 100 degree. When the flavor development nucleotide is mixed by sodium glutamate, a magic effect called taste multiple effect will emerge with certain regularity. After several years’ careful research, TOTOLE proposed the concept of multiple taste to modify the experience formula proposed by Japanese taste scientist. Based on this formula, TOTOLE launched the concept of “freshness” in the world for a definite scale of the degree of taste. And upon it, TOTOLE took the initiative to apply the new technology of combining flavor development nucleotide with sodium glutamate, and managed to develop the second generation of flavoring — enhanced MSG. In 1980s, TOTOLE started another cooking revolution and developed the third generation of flavoring — TOTOLE chicken bouillon, which provides a lasting and good taste by adopting the excellent raw material, special formula and advanced processing technology in the world. Besides, TOTOLE worked with Shanghai Industrial Microbe Research Institute and set down the food addictive standard of flavor development nucleotide in China, ensuring the legal and normative use of flavor development nucleotide in China, and at the same time, resolving many technical problems in the application of flavor development nucleotide, which laid a foundation for the industrial application of flavor development nucleotide. Due to its great effort and achievement in taste science and industry, TOTOLE earned the corporate the title of the “Most Contributory Enterprise in the Chinese Food Industry 1998-2001”, which was authorized by the State Commission of Economy and Finance and Chinese Food Industry Association.

On January 8, 2003, Shanghai TOTOLE Flavoring Food Co., Ltd. and Chinese Flavoring Association co-hosted the third International Conference on Taste Science. Various representatives from University of Miami in USA, AJINOMOTO of Japan, R&D Department of Nestle, Shanghai TOTOLE, etc, participated in the conference. Experts at the conference again revealed the secret of “being tasty” to the public. Mr. Rong Yaozhong, general manager of TOTOLE company presented the experience of TOTOLE to take the initiative to study and apply the flavor development nucleotide, completed the combination process of flavor development nucleotide and MSG as well as the freshness multiple effect calculation and finally practiced it in the industry and produced the first pack of chicken bouillon. It is the first conference on taste science that is ever hosted by Chinese. TOTOLE played an proactive role in the development of taste industry in China by defining “being tasty” as a kind of sensation and proposing the measurement of “being tasty”, which filled a blank in China’s taste science.

A high-quality and tasty product comes from an internationally competitive brand

Ever since its establishment, TOTOLE completely abandoned the short-sight idea of “taking turn to being dominant”, instead, it adopted a people-oriented and tasted-focused brand development road. To make the food culture more scientific and to meet the philosophy of “bringing more palatable taste to the 1.3 billion people”, TOTOLE not only brings people with tasty food and health, but also managed to host an international conference on taste science, launch high-level cooperation with Chinese Cooking Association so as to gain its name among all circles of the community. To this day, the cultural philosophy of TOTOLE has gradually manifested, from the competition in flavoring market and nutrition culture market, its significant role — to serve the society, and serve the civil food culture project construction.

TOTOLE chicken bouillon was developed on the basis of a long-term study of taste science and application, a reflection of which lies in the advanced levels in the formula, flavor, process technology and quality control, as well as its modeling and directing role in the industry. To standardize and direct the industry toward a healthy development, in March 2001, Chinese Flavoring Association sent a letter, in request of Chinese Chamber of Commerce’ “Project Plan to Establish Industrial Standard” (formerly known as State Commission of Economy and Trade Standard Plan), to entrust Shanghai TOTOLE Flavoring Food Co., Ltd. to be in charge of drafting out the industrial standard of “chicken bouillon”. Almost three years’ unremitting effort was made with huge investment of personnel and material before January 9, 2004, when the Development and Reform Committee of PRC declared the approval of the fifth announcement, SB/T10371-2003 “Chicken Bouillon Flavoring Industry Standard”. The standard was put to practice on July 1,2004. This is a significant event in the development of chicken bouillon industry, since the implementation of the standard will guarantee the healthy and rapid development of chicken bouillon flavoring.

TOTOLE holds the belief that the relationship between TOTOLE and its consumers is not passive or opposed to each other, but like that of lovers.
